For the kitty!fic, you could use the cats as a metaphor for something? Or they could be the catalyst for the plot, like the plot is that they’re just trying to keep the cats alive and with them or maybe trying to get paperwork together to take them back home, etc.

I think I want the kitty to be a way for them to get in touch with themselves and start healing a little after everything? Take Ray at the end, when he looks so unhinged: I think it would have been good for him to have a kitty to care for. But I don't really know how to explain the process of healing.

Well, that’s the thing about plot. You don’t have to explain it outright. You can show Ray having a hard time taking care of himself, and instead taking care of the kitty and slowly starting to also take care of himself because the kitty needs him and there you go.
